My kids love mousse and so I set myself up on a journey looking for the recipe online. Here's what I found that the kids couldn't have enough of it!
It is a simple recipe and yet satisfying to see the enjoyment in my kids when they devoured the cake. God have mercy!

Ingredients
- 300gm Strawberry
- 50gm Sugar
- 2 x 5gm Gelatin Powder
- 2 x 2 tbsp Cold water
- 250gm Digestive Biscuits
- 80gm Melted Butter
- 200gm Dark Chocolate
- 550gm Whipping Cream
Method
- Crush the digestives biscuits in a blender and mix the melted butter into the crushed mixture. Press the mixture onto an 8 inch (20cm) springpan and chill in the refrigerator.
- Add sugar to the cut strawberries and cook until the sugar is dissolved. Puree the mixture with a hand blender until smooth.
- Add 5gm of gelatin powder with 2 tbsp of cold water and let it swell for 5 to 10 minutes. Put over low heat until the gelatin is dissolved.
- Mix the dissolved gelatin to the strawberry puree and let it cool completely at room temperature.
- Pour 150gm of whipping cream into a bowl and add the dark chocolate. Melt the chocolate over low heat using the double boil method.
- Add 5gm of gelatin powder with 2 tbsp of cold water and let it swell for 5 to 10 minutes. Put over low heat until the gelatin is dissolved.
- Mix the dissolved gelatin to the melted chocolate and let it cool completely at room temperature.
- Whip 200gm of whipping cream until stiff peak is formed and add the chocolate mixture. Mix well.
- Pour the chocolate mixture onto the pressed digestive biscuits in the springpan.
- Refrigerate for 15 to 20 minutes for the chocolate mixture to set.
- Whip 200gm of whipping cream until stiff peak is formed and add the strawberry mixture. Mix well.
- Pour the strawberry mixture onto the set dark chocolate in the springpan.
- Refrigerate for 4 hours or overnight before serving.
- To serve, run a warm knife around the edges of the cake and remove the cover of the springpan.
- Top the cake with sliced strawberries and serve.
